INGREDIENTS
4 medium apples, cored, and chopped into slices
2 tbsp ghee
2 tsp ground cinnamon
½ tsp ground ginger
½ tsp ground cardamom
2 tbsp maple syrup or honey
¼ cup water
FOR THE OATS
2 cups rolled oats
2 tbsp ground flaxseeds
2 tbsp chia seeds
2 tbsp hemp seeds
2 tbsp pumpkin seeds
1 tsp cinnamon
2 tsp brewers’ yeast (optional)
2 tbsp almond butter
2 cups milk of your choice
1 whole mashed banana
2 tbsp maple syrup
METHOD
1. Preheat oven to 180°C fan-forced.
2. Add the apple chunks, ghee, cinnamon, ginger, cardamom, maple syrup, and water to a baking dish. Toss until well coated. Cover with foil and bake for 20 minutes.
3. Remove foil and bake a further 10–15 minutes, until golden, soft, and caramelised at the edges. Let cool.
4. In a large bowl, combine all of the remaining ingredients for the oats. Stir well to mix. Cover and refrigerate for at least 3 hours, or overnight.
5. Stir the oats, then divide between bowls or jars and top with baked apples. Enjoy cold, or gently warmed on the stove with an extra splash of milk if needed. Enjoy!
NOTES
Store in an airtight container in the fridge for up to 3 days.
Baked apples can be stored separately in the fridge and reheated before serving.
