Warming Spiced Lentil, Veggie and Miso Stew

Warming, easy to digest, and gently spiced — the kind of food that helps you feel nourished and grounded when life feels a little too much. The perfect nourishing bowl for any season of depletion or reset.

 

INGREDIENTS

1 tbsp ghee or olive oil

1 small onion, diced

1 tsp ground cumin

1 tsp cinnamon

½ tsp turmeric

1 medium sweet potato, peeled and cubed

¼ pumpkin, peeled and cubed

1 carrot, peeled and chopped

2 potatoes, chopped

1 cup red lentils, rinsed

1L bone broth or veggie stock

1 tbsp miso paste

Handful of greens (silverbeet, kale, spinach..) roughly chopped

Salt to taste

Optional: Lemon, yoghurt and coriander to serve


 

METHOD
  1. In a heavy-based pot, warm oil or ghee. Sauté onion until soft.

  2. Add cumin, cinnamon, and turmeric and stir gently for 30 seconds. Add chopped root veg and lentils. Stir to coat.

  3. Pour in broth or stock. Bring to a boil, then reduce to a gentle simmer.

  4. Simmer uncovered for around 25–30 minutes, stirring occasionally, until the lentils have broken down and vegetables are tender.

  5. Turn off heat and stir through miso and fresh greens.

  6. Season to taste. Serve with a spoon of yoghurt or ghee on top, and fresh coriander and lemon.

 

 

Postpartum Tip: 

This will make 1.5 - 2L of stew and is perfect for freezing in small portions. This stew is especially supportive for mamas recovering from blood loss, slow digestion, or needing stable energy through long days and nights. Replace onion with leek if mama is sensitive or bub is suffering from colic symptoms.
